The Big Cheese from the Heini Amish Dairy





I decided recently to order Amish cheese from the Heini dairy.  It is aged cheddar.  I ordered it on the internet, and they mailed it in a styrofoam box with ice packs to keep it chilled.  

I was surprised at the size of the cheese they sent.   It may be eight lbs.  I put it in the refrigerator, and left it for a while, being afraid of it.  

Today I finally cut off about half a pound and ate a slice and grated the rest.  Oh my.  It was fabulous.  I sometimes buy some Irish cheese at Walmart that is kind of pricey, but it's so delicious that it's worth it.  This tastes a lot like that.  It is paler than cheddar usually is, probably because it wasn't colored, and it is on the sharp side, which I prefer.   I'm really happy with it.  It's organic, which in a roundabout way is how I happened to buy it.  I don't go out of my way usually to buy organic because ... what does "organic" mean?  It looks like it means shriveled up runts that cost twice as much most of the time.  And what do I get in exchange?  Nothing for certain, since it's not defined.   But this was from grass fed cows and raw milk, so that seems like a good thing.  

Yum.  Thinking about my diet, what do I eat?  Hmmm....  A lot of eggs.  Cheese.  Veggies.  Cream, but usually not milk, because I just don't like milk.  Lacto ovo vegetarian?  Well, lactose ovo steako vegetarian.  

So that was today in paradise.
